Bread King Bakery @ Serangoon Gardens

I must admit when we first reached the Bread King, I was very skeptical of the food quality. Bread King is set inside Burghley Squash and Tennis centre set deep in Serangoon Gardens on a one way street, with a small shop front and aluminium metal tables and chairs. It doesn’t look anything like any of the hipster cafes we were used to visiting on Sundays. But I began to feel more assured when the smell of freshly baked cake reached me, and seeing families around enjoying their food helped.

We were soon greeted by Pedro, the ‘angmoh’ featured on all Bread King collaterals, who offered us 2 options: 1) regular sandwiches or 2) bread basket served with salad, burrata cheese and ham. Since there was 3 of us, we decided to go for the bread basket and I am really glad we did!

The Bread basket ($12) comprises French baguettes and Pedro’s signature sour dough. The Burrata Salad Platter ($25) had an uncut beautiful slab of Burrata cheese shipped directly from Puglia Italy, 18m months aged prosciutto ham, tomatoes, olive oil and salt. Pedro was proud to add that he ships 48 pieces of Burrata every Friday, and all are sold out by Sunday. In fact, we had the second last piece for the week! The salads served were organic, and we were provided a bottle of vinaigrette sauce (also imported from Italy) to accompany the vegetables.

After hearing all of that, it was time to put the food to test. Firstly, I applied fresh Brittany butter to the sour dough, then I unroll the prosciutto ham on top, before putting an oozing slab of burrata and finally piling the final piece of tomato on the mount. At the first bite, I felt milky creamy goodness melted over the fresh crunch of the tomato and warmth of the bread. So yummylicious!!!!

Tip: Also suggest you try with different combinations and degrees of salt, olive oil and Brittany butter, as the flavours interestingly vary.

Pedro oozes enthusiasm over his baking and his ingredients! I learnt a lot of food facts from him, such as how butter was born in Brittany. Also, because the butter quality is so good, if you wash the butter knife with just water, all the butter goodness will come off without sticking to the knife. Maybe one day, I should buy butter home and try to wash to test! He is also very proud of his croissants so we tried one though the bread basket with salad was super filling! Apparently, croissants are usually accompanied by 20% butter and the rest is a mix of margarine, milk etc . Pedro’s croissant is made from 100% Brittany butter, and wow, that detail really makes a difference in the taste, crispiness and fluffiness of the pastry. Check out the nice air bubbles when the croissant is cut. I feel like I finally ate a true croissant! I think one day, I shall cut another regular croissant, and put the pictures of side by side for comparison.

Other than selling prepared food, Pedro also can provide catering for company events and baking parties, and also import fresh dairy, meats and other gourmet items from Europe every week. A selection of breads and pastries is baked every 3 hours or baked to order (you need to call 1 hour before pickup) to offer freshly baked bread. I will definitely be back to pack the Burrata cheese to go for only $14.50.

Pedro has an interesting background of Spanish-Italian roots, growing up in Latin America, has a baker grandpa, lived in France, worked in Japan for 21 years and now living and enjoying Singapore. So, on top of the great food at Bread King, there was not a dull moment in the conversations!

One of the few must try recommendation from me!! Well done, Bread King! 🙂
